I have suggestions:
1) Should hard boil egg instead of cooking in a dry skillet.
2) Buy beans and rice from the bulk bin--much cheaper than bagged or boxed.

Sweet potatoes are often cheap in bulk, are extremely healthy, and are very filling. A baked sweet potato is delicious even without any topping.

Also, look for a good bargain opportunity on unsalted butter. NOT salted, not margarine. Real, unsalted butter. The cheapest way is generally the 4 sticks in a box way. That one box will last you the whole month or longer.

If you already don't have oil/butter to fry the egg with, microwaving it wouldn't be any healthier. It would probably be easier but I don't like how rubbery it can make the eggs.

You could always crack an egg on to a saucer and stick it in the microwave for about 45 seconds or so. It's a little bit healthier that way. ^_^

Being from Texas, I am glad you finally discovered the addition of salsa...adds tons of flavor to lots of things & is a healthy condiment! As for adding to your menu with minimal cooking skills, I suggest adding cheese to the grocery list and make some quesadillas...you can combine a lot of different things to make a hot & satisfying meal...cooking is equivalent to making a grilled sandwich! Easy peasy! Great adventure you have going here!

You must make sure you are meeting dietary needs- perhaps a baked potatoe (salsa, beans).

Many of the donated items were free (or money makers). The reason I bought them in such quantities was so I could use the overage to buy other things to eat, so even if I took the price, it would be very little. Then again, $1 a day isn't a whole lot...

If you have donated items to the food bank, you should take the value of those items and add that back to the money that you can spend on yourself... ? Or at least, add up that value, and if you run out of money at the end of the month, you could spend that and pretend it was like going to the food bank... just an idea - which might relieve some of the stress.

Your bean burritos sound good. I've never cooked anything like that, so I might have to give it a try.

I am open to suggestions - maybe I should will list what I still have available in future posts. I have a feeling that lunch will stay the same maily because I like it, it's easy and I tend to be really busy during the day, but I am always open to suggestions. Getting variety is pretty difficult on $1 a day (at least on these beginning days where I still need to conserve my money since I'm not sure what will and will not be available in the future.

You are doing good and I can't wait to see how you do but there has got to be something that you can "cook" beside burritos!
